I loved this salad! Made exactly as stated but added a little feta cheese. I can’t wait to eat the leftovers tomorrow! The dressing was fantastic and the chicken too!

I kinda can’t believe it since here in Minnesota we were all “April Blizzard” a minute ago, but you guys, it’s totally here. And I totally had it for dinner last night.
Here’s what it tasted like:
- juicy strawberries
- crisp salty bacon
- sweet green lettuce
- bursts of sweet corn
- creamy avocado chunks
- and smoky chipotle grilled chicken! REPEAT: GRILLED!

This dream team of ingredients better known as a Summer Chipotle Chicken Cobb Salad is coming to our hearts today from the What’s Gaby Cooking Cookbook.
Remember when I published those BEST EVER chicken tinga tacos and told you about my friend Melissa’s amazing book and then talked about how I hardly ever promote books? But then I turned around and told you how great THIS one was, too? LOL to me. It’s just dumb luck that both of these came out when they did.

And this one is one that I like. And this might be one of its best recipes. Tied with the cilantro vinaigrette, which I couldn’t not use again for this salad. I know Gaby says to use the champagne vinaigrette with this salad, but GABY COME ON YOU CAN’T TEASE US LIKE THAT. One good lick of that cilantro dressing and you’re done. Goodbye. This is your life now.

Okay, salad ingredients. As mentioned, there is a lot of fresh summery goodness going on here, and it looks like so:

The more “involved” part of the recipe (if you can even call it that) is just plopping your chicken in some spices and a few chipotle peppers and letting it marinate for a while before grilled.
WORTH IT, you guys! So worth it.
Also probably more normal to take a picture of the grilled chicken rather than the raw marinated stuff, but who said anything about normal.

Bjork and I ate this salad on the deck on a random Tuesday night and we both mega-loved every lip-lickin juicy bite. It’s now one of my favorite summer dinners.
It’s a little spicy, a lot crunchy, and those bites of sweetness in between are so super rewarding.

Summer Chipotle Chicken Cobb Salad with Cilantro Vinaigrette

Description
This juicy salad tastes like summer! With chipotle chicken, sweet corn, avocado, cilantro vinaigrette, bacon crumbles, and fresh strawberries for a pop of sweetness. Recipe republished from the What’s Gaby Cookin’ cookbook!
Ingredients
For the Chipotle Chicken:
- 1 tablespoon vegetable oil
- 2 chipotle chiles in adobo, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (I added this – not in original recipe)
- 3–4 chicken breasts or thighs
For the Summer Cobb Salad:
- 3–4 cups greens (see notes)
- 4 strips bacon, cooked and crumbled
- 8–10 strawberries, quartered
- 2 ears corn on the cob, kernels removed
- 1–2 ripe avocados, sliced
- salt and pepper
- cilantro vinaigrette! so yummy.
Instructions
- Prep the chicken: Combine the oil, chipotles, garlic powder, cumin, oregano, black pepper, and salt in a bowl. Place the chicken in the bowl and toss to coat the chicken in the marinade. Place in the fridge and let it marinate while you prep your other ingredients.
- Prep salad: Prep all your salad ingredients (cook the bacon, slice the strawberries, cut the corn off the cob, etc.).
- Grill the chicken: Heat an outdoor grill (or grill pan) to about 400 degrees. Place chicken on the grill and grill for 5-6 minutes per side, until cooked through. Remove the chicken from the grill and let rest for ten minutes. Slice against the grain.
- Salad: Arrange the greens on a large platter and top with the bacon, strawberries, corn, avocado, and grilled chicken. Season with salt and pepper. Toss with the cilantro vinaigrette and serve!

Greens: We used spring greens in the pictures on this post, but we love this with just spinach too depending on what you have on hand!

This was so good, my non salad loving boys licked their bowls. I did add crumbled goat cheese and pepitas. Will make again and again. yum!
I love your recipes, this one was excellent. My 14yo said best salad yet!! Followed the recipe with one change- pan fried the corn kernels for a few minutes. This cilantro dressing is outstanding, will definitely be using that for other applications (thinking would be great on roasted potatoes!). Chicken has some heat and the strawberries add a nice sweet balance-like a little surprise! This will definitely be in the summer rotation. Thanks for another winner.
Made this for my hubby & I & we both loved it. I only had 1 ripe avocado, but would go with 2 next time. Quantities in the recipe are perfect & dressing is amazing💗

My entire family loved this! It was a fresh take on a classic cobb salad and the marinade had the perfect amount of heat. Cilantro vinaigrette was very easy to make and would also make a great chimichurri substitute.
This is THE BEST summer salad. So fresh and satisfying. I loved everything about it – spicy protein, herby dressing, creamy avocado, and sweet, juicy strawberries and corn! Made it last week for lunches, and I’m making it again this week.
Made this twice this week it was such a hit. We doubled the bacon and strawberries and added hard boiled eggs to keep with the Cobb theme. Also doubled the cilantro vinaigrette. Perfect summer dinner!!

LOVE, LOVE, LOVE this salad. Used a balsamic vinegrette in place of the cilantro dressing. My husband doesn’t usually come back for 2nds. This will be on our repeat list.
This doesn’t look much like Cobb salad, but it definitely looks delicious. I added crumbled queso fresco to mine. I also cooked my chicken on a grill pan on my stove top–was so delicious I’ve done it several times as a main dish.
do you have an idea for a different dressing..not cilantro or parsley? This sounds amazing other wise, to this cilantro hating person 🙂

I’ve just gotten into airfrying (thanks to your chicken breast 🤣). Do you think this would air fry ok? Would you change the amount of oil? Love the idea of this salad & really want to give it a try.
I think this would work great! Or I’d even just opt for making our Air Fryer Chicken in place of it as the spices on it would work well!
I made a version of this salad for dinner tonight. I omitted the bacon and added cucumbers. It was delicious!! The cilantro vinaigrette will be on repeat all summer!

I wanted to love this because I love the idea of a cilantro dressing but… the dressing. It was not like a dressing. It was the texture of tabblouleh so I added water in tiny increments and then it was just like cilantro clumps in water. I added more oil to try to make it creamy but it never quite got the right texture. It needs work, but it tasted great. I would probably find a green goddess dressing recipe base and start from there if I was making it again. A rare miss, I usually adore everything I make from the site!

Lovely spice for the chicken complimenting the cool strawberries. I crave the dressing and got all out of sorts when I grabbed parsley instead of cilantro last week. Who knew parsley gives some wow to morning smoothies? Never would have found out without this error.
This healthy meal I certainly agree would surely make an ideal post-treadmill meal after achieving about 2 hours of cardio and fresh off of the treadmill. I’m feeling really great today after I’ve noticed my stomach is getting flatter, my waistline is shrinking, I’m feeling the toxic thoughts and mindset slowly diminishing, and getting healthier inside out.
This new weight loss and healthy eating pattern is helping me to stay on track with my goals, in addition to helping me have a greater respect for rejection and life. I’ve discovered hidden treasure beyond tangible gains while enduring rejection. It’s making me a better person. 🙂
